Spring-ai Replace spring-batch with spring-ai in GH templates

There were still a lot of occurences of spring-batch in all the GH templates.

You might want to enable GH Discussions for the project.

some of these links don't exist. I'll make a pass to clean it up and create an issue for anything that remains... we aren't releasing to maven central just yet ! ;)
