Redis [DOCS] missing cb signature for RedisModule_RegisterInfoFunc

The docs don't describe the cb signature to pass to RedisModule_RegisterInfoFunc

i don't see that we documented the signature of any other callback function. e.g. not even RM_CreateDataType. i.e. i suppose that even if we sometime document a usage example, we expect people to get the signature from the header.
