Spring Security Tags with collector config fail to build docs

Certain tags fail to build docs. Specifically, 6.0.0-RC1 contains an antora.yml with a collector config. Similar to gh-12568, the fix is to run the gradle command with -Porg.gradle.java.installations.auto-detect=false. However, existing command in the collector doesn't contain this flag, so we need to override it.
