SpringBoot Fix documentation on probes states during graceful shutdown

In the Application lifefycle and Probes states section, we're mixing the ApplicationState and the actual values returned by Probes (which are not necessarily based on HTTP).

We should clarify that, since HTTP probes might not be available at all depending on the application lifecycle.
