Hi,
I'm at a point where my local tests are green (well, apart from some flaky Docker tests). The next step for official JDK 17 support would be a running pipeline that this PR adds.
As usual the pipeline stuff is almost impossible to test for me, so I'd need your help here.

Thanks very much, @dreis2211. I've updated the 2.5.x and 2.6.x pipelines on ci.spring.io and things look good to me. The new CI images are building now. Let's see how the builds go.
