I'm trying to migrate my project to Java 16 and for this reason, switching to the new Spring Boot version (2.5.0) . Unfortunately, I'm not able to run my app successfully.

That points to JEP 396: Strongly Encapsulate JDK Internals by Default (JDK-8256299). That triggered this behavior.
Adding --illegal-access=permit to the VM options resolves the problem. Not sure if this is the "best solution" but at least a workaround for now.
It may be useful to add this to the release notes, as there is no information on this in the upgrade guidelines.

Thanks for the report but I fail to see why you think this is a Spring Boot issue. The problem you've faced is rather when you upgraded to Java 16 and there's nothing we can do about a usage of Unsafein JAXB.

I get that, but jaxb is being used in Spring. I guess it would be nice to see at least a note that would inform devs where to go next. As Springs ReleaseNotes is the first please to check when you are upgrading to JDK 16 and SpringBoot is requiring an update as well.

Sorry but I don't think this is accurate. First of all, Spring doesn't use JAXB but it integrates with it. Either a lib you're using or your own choice is what lead it to be used.
Then, spring boot 2.5 is not requiring any update at all. If you're talking about Java 16, 8 and 11 are also supported as usual.
If you're looking for jaxb specific help, it sounds more logical to me to first look in that project.

AFAIK, this has already been fixed in the latest versions of JAX-B 2.3.x. You appear to be using 2.3.0.1 and the fix was made in 2.3.1.
You should also be using the newer jakarta.xml.bind:jakarta.xml.bind-api rather than jaxb-api. The latter, following the donation of Java EE to Eclipse where it was rebranded as Jakarta EE, is no longer maintained.
